Recipe of the Week: Skin Loving Sweet Potato and Black Bean Chilli
Ingredients
2 medium sweet potatoes, peeled and diced
1 can (400g) black beans, drained and rinsed
1 can (400g) diced tomatoes
1 onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
1/2 tsp cayenne pepper (optional, for added heat)
1 tbsp olive oil
1 cup vegetable broth
1 tbsp honey or maple syrup (optional, for added sweetness)
Salt and pepper to taste
Fresh cilantro, chopped (for garnishing)
Avocado, sliced (for garnishing)
Greek yogurt or sour cream (for garnishing, optional)
Method
Prepare the Sweet Potatoes:
Peel and dice the sweet potatoes into bite-sized pieces.
Sauté the Onion, Garlic, and Bell Peppers:
Heat the olive oil in a large pot over medium heat.
Add the finely chopped onion, minced garlic, and diced red and green bell peppers. Sauté for about 5-7 minutes until the onions are softened and translucent.
Add the Spices:
Stir in the chili powder, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if using). Cook for an additional 1-2 minutes until the spices are fragrant.
Cook the Sweet Potatoes and Black Beans:
