Recipe of the Week: Nutty Energy Bites
Ingredients:
1 cup raw almonds
1/2 cup raw walnuts
1/2 cup raw pistachios (shelled)
1/2 cup raw cashews
1 cup pitted dates
1/4 cup honey or maple syrup
1/4 cup unsweetened shredded coconut
1 tbsp chia seeds
1 tsp vanilla extract
1/2 tsp ground cinnamon
Pinch of salt
1/4 cup dark chocolate chips (optional)
Method
Prepare the Nuts:
Place the almonds, walnuts, pistachios, and cashews in a food processor. Pulse until the nuts are finely chopped but not completely ground into a powder. You want some texture to remain.
Add the Dates:
Add the pitted dates to the food processor and pulse until the dates are well combined with the nuts and the mixture starts to stick together.
Combine the Ingredients:
