Recipe of the Week: Omega-3 Power Salad With Grilled Salmon

Ingredients:

  • 1r the Salad:

    • 2 salmon fillets (about 150g each)

    • 2 tbsp olive oil

    • 1 tsp lemon zest

    • 1 tbsp lemon juice

    • 1 clove garlic, minced

    • ½ tsp salt

    • ½ tsp black pepper

    • 100g mixed salad greens (spinach, kale, rocket)

    • ½ cucumber, sliced

    • 1 ripe avocado, sliced

    • 50g walnuts, roughly chopped

    • 2 tbsp chia seeds

    • 2 tbsp hemp seeds

    For the Dressing:

    • 2 tbsp extra virgin olive oil

    • 2 tbsp apple cider vinegar

    • 1 tbsp honey or maple syrup

    • 1 tbsp Dijon mustard

    • 1 clove garlic, minced

    • ½ tsp salt

    • ½ tsp black pepper

Method

  1. Preheat your grill or grill pan to medium-high heat.
