  • Salt and black pepper to taste

For the Roasted Baby Potatoes:

  • 2 cups baby potatoes, halved

  • 1 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp dried oregano

  • Salt and black pepper to taste

For the Sautéed Spinach:

  • 2 cups fresh spinach

  • 1 tsp olive oil

  • 1 clove garlic, minced

  • Salt and black pepper to taste

  • 1 tbsp lemon juice

Method

Step 1: Prepare the Lamb Chops

  1. In a bowl, mix olive oil, garlic, rosemary, thyme, smoked paprika, salt, and black pepper to create a marinade.

  2. Coat the lamb chops evenly and let them marinate for 15-20 minutes.

  3. Heat a grill pan or skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side, or until they reach your desired doneness (medium-rare: 57°C/135°F, medium: 60°C/140°F).
